Lobster Thermidor Recipe

Ingredients:

  • 2 lobster tails (or whole lobsters)
  • 2 tbsp unsalted butter
  • 1/4 cup finely chopped shallots
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 tbsp brandy (optional)
  • 1/4 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1/2 cup grated Gruyère cheese
  • 1 tbsp fresh tarragon, chopped
  • Salt and freshly ground black pepper
  • 1/2 cup breadcrumbs (preferably panko)
  • 1 tbsp parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

1. Prepare the Lobster:
  1. Bring a large pot of salted water to a boil.
  2. Place the lobster tails (or whole lobsters) into the pot and cook for about 5-6 minutes, just until the shells turn bright red and the lobster meat is opaque.
  3. Remove the lobsters and set aside to cool. Once cooled, carefully remove the lobster meat from the shells, saving the shells for later use.
  4. Cut the lobster meat into bite-sized chunks and set aside.
2. Make the Thermidor Sauce:
  1. In a medium skillet, melt butter over medium heat.
  2. Add the shallots and garlic, sautéing for 2-3 minutes until fragrant and softened.
  3. Pour in the white wine and brandy (if using), letting it simmer for 3-4 minutes to reduce.
  4. Stir in the heavy cream and Dijon mustard, and simmer until the sauce thickens, about 5 minutes.
  5. Season with salt, pepper, and chopped tarragon.
3. Assemble the Lobster Thermidor:
  1. Preheat your oven to 375°F (190°C).
  2. Place the lobster shells on a baking dish.
  3. Spoon the lobster meat into each shell, then pour the sauce over the lobster meat.
  4. Sprinkle the tops with grated Gruyère cheese and breadcrumbs for a golden, crispy finish.
4. Bake the Lobster:
  1. Place the prepared lobster shells into the oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly and the top is golden brown.
5. Serve and Garnish:
  1. Remove from the oven and garnish with fresh parsley.
  2. Serve immediately with lemon wedges on the side.
