Sauerbraten Recipe

Ingredients:

  • 3 lbs (1.4 kg) beef roast (chuck or round)

  • 2 cups water

  • 1 tbsp sugar
  • 1 tbsp salt
  • 1 tsp black peppercorns
  • 2 bay leaves
  • 1 tsp ground cloves
  • 1 tsp mustard seeds
  • 1 tbsp vegetable oil
  • 2 tbsp flour (for thickening)
  • 2 tbsp butter (optional)
  • 2 cups beef broth

Instructions:

1. Marinate the Meat
  1. In a large bowl or dish, mix vinegar, water, onion, garlic, sugar, salt, peppercorns, bay leaves, cloves, and mustard seeds.
  2. Place the beef roast in the marinade, ensuring it is fully submerged.
  3. Cover and refrigerate for 3-4 days, turning the meat occasionally for even marination.
2. Brown the Meat
  1. Remove the beef from the marinade and pat it dry with paper towels.
  2. Heat vegetable oil in a large Dutch oven over medium-high heat.
  3. Brown the beef roast on all sides, approximately 5-7 minutes total.
3. Cook the Sauerbraten
  1. Add the marinade to the pot, including the onions and spices.
  2. Bring the mixture to a simmer, then cover and cook on low heat for 3-4 hours, or until the meat is tender.
  3. After cooking, remove the beef from the pot and set it aside.
4. Make the Gravy
  1. Strain the cooking liquid to remove solids.
  2. In the same pot, melt butter and whisk in flour to form a roux.
  3. Gradually add the strained cooking liquid, stirring to form a smooth gravy.
  4. Simmer the gravy for 5-10 minutes to thicken, adding beef broth as needed.
