Peking Duck Recipe
Ingredients:
For the Duck:

- 1 tbsp salt
- 1 tbsp honey
- 2 tbsp rice vinegar
- 1 cup boiling water
- 2-3 sprigs of fresh thyme

- ¼ cup hoisin sauce
- 1 cucumber, julienned
- 1 bunch green onions, julienned
Instructions:
1. Prepare the Duck
- Clean and pat the duck dry, removing any excess fat.
- In a small bowl, mix five-spice powder and salt, then rub the mixture all over the duck.
- Place the duck on a rack and hang it in a cool, dry place for 4-6 hours (or overnight) to air-dry.
2. Roast the Duck
