Saltimbocca Recipe
Ingredients:
- 4 veal cutlets (or chicken breasts)
- 4 slices prosciutto
- 8 fresh sage leaves
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 1 cup dry white wine
- ½ cup chicken broth (or vegetable broth)
- Salt and freshly ground black pepper (to taste)
- 2 tbsp flour (for dusting)
Instructions:
1. Prepare the Meat
- Place the veal cutlets between two sheets of plastic wrap and lightly pound them to about ¼ inch thick using a meat mallet.
- Lay a slice of prosciutto and 2 sage leaves on each cutlet, securing them with toothpicks.
2. Sear the Meat
- Lightly dust each cutlet with flour and season with a pinch of salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the cutlets to the skillet and cook for 2-3 minutes on each side until golden brown. Remove and set aside.
3. Make the Sauce
- In the same skillet, melt butter.
