Ingredients:

  • 3 ripe bananas, mashed
  • 1/4 cup coconut oil (or any neutral oil)
  • 1/2 cup plant-based milk (almond, soy, or oat)
  • 1/4 cup maple syrup or other sweetener
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Optional: 1/4 cup chopped walnuts or vegan chocolate chips

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Mix wet ingredients: In a large bowl, mash the ripe bananas with a fork until smooth. Add the coconut oil, plant-based milk, maple syrup, and vanilla extract. Stir until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt.
  4. Mix the batter: Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix. If using, fold in chopped walnuts or vegan chocolate chips.
  5. Bake: Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
