Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened apple sauce or mashed banana
  • 3/4 cup plant-based milk (almond, soy, or oat)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • Oil for frying (optional, if frying)

Instructions:

For Baked Donuts:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a donut pan lightly with coconut oil or non-stick spray.
  2. Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Combine wet ingredients: In another bowl, mix apple sauce or mashed banana, plant-based milk, melted coconut oil, and vanilla extract.
  4. Create the batter: Gradually add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fill the donut pan: Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  6. Bake: Bake for 10-12 minutes or until the donuts are golden brown and a toothpick inserted into one comes out clean.
  7. Cool and glaze: Allow the donuts to cool slightly before removing them from the pan. Top with powdered sugar, cinnamon, or your favorite glaze.

For Fried Donuts:

  1. Prepare the dough: Follow steps 2-4 above.
  2. Heat oil: Heat oil in a deep pot to 350°F (175°C).
  3. Shape the donuts: Roll the dough into balls or use a donut cutter to shape them.
  4. Fry: Fry the donuts in batches, cooking for about 1-2 minutes per side until golden brown. Transfer to a paper towel to drain excess oil.
  5. Cool and serve: Once slightly cooled, dust with powdered sugar or dip in a glaze for extra sweetness.
