Ingredients:

  • 1 cup pitted dates
  • 1/2 cup almonds (or other nuts)
  • 2 tablespoons cacao powder
  • 2 tablespoons coconut oil, melted
  • 1/4 cup shredded coconut (optional for rolling)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions:

  1. Soak the dates: If your dates are dry, soak them in warm water for about 10 minutes, then drain.
  2. Blend ingredients: In a food processor, combine the dates, almonds, cacao powder, coconut oil, vanilla extract (if using), and a pinch of salt. Pulse until the mixture forms a sticky dough.
  3. Shape the balls: Scoop out small portions of the mixture and roll them into bite-sized balls with your hands.
  4. Coat (optional): If desired, roll the energy balls in shredded coconut for a delicious coating.
  5. Chill and enjoy: Place the energy balls in the refrigerator for at least 20 minutes to firm up. Store them in an airtight container for up to a week.
