Ingredients:

  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 ripe avocado (mashed)
  • 1/2 cup maple syrup or agave nectar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup oats (blended into flour)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Blend the Ingredients:
    • In a food processor, combine the black beans, mashed avocado, maple syrup, cocoa powder, blended oats, baking powder, salt, and vanilla extract. Blend until smooth.
  3. Add Chocolate Chips:
    • If using, stir in the vegan chocolate chips.
  4. Pour and Spread:
    • Pour the brownie batter into the prepared baking pan and spread it evenly.
  5. Bake:
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.
  6. Cool and Serve:
    • Allow the brownies to cool in the pan for 10 minutes before cutting into squares. Serve warm or at room temperature.
