Vegan Pancakes Recipe

Ingredients:

  • 1 cup all-purpose flour (or whole wheat flour)
  • 2 tablespoons sugar (optional)
  • 2 tablespoons baking powder
  • 1/4 teaspoon salt
  • 1 cup almond milk (or any plant-based milk)
  • 2 tablespoons vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract

Instructions:

  1. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. Combine Wet Ingredients:
    • In a separate bowl, mix the almond milk, vegetable oil, and vanilla extract.
  3. Combine Mixtures:
    • Pour the wet ingredients into the dry ingredients. Stir until just combined. Be careful not to overmix; some lumps are okay.
  4. Heat the Pan:
    • Heat a non-stick skillet or griddle over medium heat. You can lightly grease it with oil or cooking spray.
  5. Cook the Pancakes:
    • Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  6. Serve:
    • Remove the pancakes and keep them warm while you cook the remaining batter. Serve with your favorite toppings such as maple syrup, fresh fruit, or nut butter.
