Tofu Scramble Recipe

Ingredients:

  • 1 block (14 oz) firm or extra-firm tofu
  • 1 tablespoon olive oil (or any cooking oil)
  • 1/2 onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric powder (for color)
  • 1 teaspoon cumin (optional)
  • Salt and pepper to taste
  • 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
  • Fresh spinach or kale (optional)
  • Fresh herbs (like cilantro or parsley) for garnish

Instructions:

  1. Prepare the Tofu:
    • Drain the tofu and press it gently to remove excess moisture. Crumble the tofu into small pieces using your hands or a fork.
  2. Sauté the Vegetables:
    • In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes, or until the vegetables are soft.
  3. Add Garlic and Spices:
    • Add the minced garlic, turmeric, cumin (if using), salt, and pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.
  4. Add the Tofu:
    • Add the crumbled tofu to the skillet. Stir well to combine and cook for about 5-7 minutes, allowing the tofu to absorb the flavors. If using, add nutritional yeast and mix well.
  5. Add Greens:
    • If you want to add spinach or kale, stir it in and cook until just wilted.
  6. Serve:
    • Taste and adjust seasoning as needed. Garnish with fresh herbs and serve warm.

Tips:

  • Serve your tofu scramble on toast, in a wrap, or alongside avocado and tomatoes.
  • Feel free to add other vegetables like mushrooms, zucchini, or broccoli for extra nutrition.
