Tofu Scramble Recipe
Ingredients:
- 1 block (14 oz) firm or extra-firm tofu
- 1 tablespoon olive oil (or any cooking oil)
- 1/2 onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 teaspoon turmeric powder (for color)
- 1 teaspoon cumin (optional)
- Salt and pepper to taste
- 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
- Fresh spinach or kale (optional)
- Fresh herbs (like cilantro or parsley) for garnish
Instructions:
- Prepare the Tofu:
- Drain the tofu and press it gently to remove excess moisture. Crumble the tofu into small pieces using your hands or a fork.
- Sauté the Vegetables:
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes, or until the vegetables are soft.
- Add Garlic and Spices:
- Add the minced garlic, turmeric, cumin (if using), salt, and pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.
- Add the Tofu:
- Add the crumbled tofu to the skillet. Stir well to combine and cook for about 5-7 minutes, allowing the tofu to absorb the flavors. If using, add nutritional yeast and mix well.
- Add Greens:
- If you want to add spinach or kale, stir it in and cook until just wilted.
- Serve:
- Taste and adjust seasoning as needed. Garnish with fresh herbs and serve warm.
