Shrimp and Grits Recipe

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup stone-ground grits
  • 4 cups water or low-sodium chicken broth
  • 2 tbsp unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional for heat)
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped, for garnish

Instructions:

1. Prepare the Grits:
  1. In a medium saucepan, bring 4 cups of water or chicken broth to a boil.
  2. Stir in the grits and reduce the heat to low. Simmer, stirring occasionally, until the grits are thickened and tender, about 20-25 minutes.
  3. Once the grits are cooked, stir in the butter, cheddar cheese, and heavy cream. Season with salt and pepper to taste. Keep warm.
2. Cook the Shrimp:
  1. While the grits are cooking, heat a large skillet over medium-high heat.
  2. Add the shrimp to the skillet and season with smoked paprika, cayenne pepper (if using), salt, and pepper. Cook for about 2-3 minutes per side until the shrimp turn pink and are cooked through.
  3. Remove the shrimp from the skillet and set them aside.
3. Make the Sauce:
  1. In the same skillet, add a little more butter if needed and sauté the garlic for 1-2 minutes until fragrant.
  2. Add the crumbled bacon and cook for another 2 minutes.
  3. Stir in the lemon juice and any juices from the cooked shrimp. Let the sauce simmer for an additional 2 minutes to combine the flavors.
4. Serve:
  1. Spoon a generous portion of the creamy grits onto plates.
  2. Top with the cooked shrimp and pour the bacon-garlic sauce over the top.
  3. Garnish with fresh parsley and serve immediately.
