Ingredients:

For Blueberry Muffins:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar (or coconut sugar)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened almond milk (or any plant-based milk)
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

For Carrot Muffins:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1/3 cup vegetable oil

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt (and spices if making carrot muffins).
  3. Combine wet ingredients: In a separate bowl, mix the almond milk, oil, and vanilla extract. For the carrot muffins, add the grated carrots and applesauce.
  4. Combine mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the blueberries (for blueberry muffins) or the grated carrots (for carrot muffins).
  5. Fill muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake: Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
