Flavorful Stuffed Sweet Potatoes

Stuffed Sweet Potatoes Recipe:

Ingredients:

  • For the Sweet Potatoes:
    • 4 medium sweet potatoes
  • For the Filling:
    • 1 can black beans (15 oz, drained and rinsed)
    • 1 cup corn (canned or frozen)
    • 1 avocado (diced)
    • 1 cup salsa (store-bought or homemade)
    • 1 tsp cumin
    • 1 tsp chili powder
    • Salt and pepper to taste
  • For Garnish:
    • Fresh cilantro (chopped, optional)
    • Lime wedges (for serving)

Instructions:

  1. Prepare the Sweet Potatoes:
    • Preheat the oven to 400°F (200°C).
    • Wash and pierce the sweet potatoes with a fork several times. Place them on a baking sheet lined with parchment paper.
    • Bake for 45-60 minutes, or until tender (cooking time may vary based on size).
  2. Prepare the Filling:
    • In a mixing bowl, combine the black beans, corn, diced avocado, salsa, cumin, chili powder, salt, and pepper. Mix gently to combine.
  3. Assemble the Stuffed Sweet Potatoes:
    • Once the sweet potatoes are cooked, remove them from the oven and let cool slightly.
    • Slice each sweet potato down the center (but not all the way through) and gently press the ends to open them up.
    • Spoon the black bean mixture into each sweet potato.
  4. Serve:
    • Garnish with chopped cilantro and serve with lime wedges on the side. Enjoy warm!
