Stuffed Sweet Potatoes Recipe:
Ingredients:
- For the Sweet Potatoes:
- For the Filling:
- 1 can black beans (15 oz, drained and rinsed)
- 1 cup corn (canned or frozen)
- 1 avocado (diced)
- 1 cup salsa (store-bought or homemade)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- For Garnish:
- Fresh cilantro (chopped, optional)
- Lime wedges (for serving)
Instructions:
- Prepare the Sweet Potatoes:
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork several times. Place them on a baking sheet lined with parchment paper.
- Bake for 45-60 minutes, or until tender (cooking time may vary based on size).
- Prepare the Filling:
- In a mixing bowl, combine the black beans, corn, diced avocado, salsa, cumin, chili powder, salt, and pepper. Mix gently to combine.
- Assemble the Stuffed Sweet Potatoes:
- Once the sweet potatoes are cooked, remove them from the oven and let cool slightly.
- Slice each sweet potato down the center (but not all the way through) and gently press the ends to open them up.
- Spoon the black bean mixture into each sweet potato.
- Serve:
- Garnish with chopped cilantro and serve with lime wedges on the side. Enjoy warm!
