Ingredients:

For the Marinade:

  • 1/4 cup olive oil
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp lemon juice
  • 2 cloves garlic (minced)
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

For the Kebab:

  • 1 block firm tofu (14 oz, pressed and cubed)
  • 1 zucchini (sliced)
  • 1 red bell pepper (cut into squares)
  • 1 onion (cut into wedges)
  • 1 cup mushrooms (whole or halved)
  • 1 eggplant (cubed, optional)
  • Wooden or metal skewers

For Serving:

  • Cooked rice or flatbread (like pita or lavash)
  • Lemon wedges
  • Fresh parsley (for garnish)

Instructions:

  1. Prepare the Marinade:
    • In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, cumin, paprika, salt, and pepper.
  2. Marinate the Tofu and Vegetables:
    • Place the cubed tofu in one dish and the vegetables in another. Pour half of the marinade over the tofu and the other half over the vegetables. Let both marinate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Assemble the Kebabs:
    • Thread the marinated tofu and vegetables onto skewers, alternating between tofu, zucchini, bell pepper, onion, mushrooms, and eggplant if using.
  4. Grill the Kebabs:
    • Preheat your grill or grill pan over medium-high heat. Cook the kebabs for about 10-12 minutes, turning occasionally, until the vegetables are tender and the tofu has grill marks.
  5. Serve:
    • Serve the vegan kebabs with a side of rice or flatbread, garnished with fresh parsley and lemon wedges for a bright flavor.
