Homemade Kombucha: 7 Easy Steps to Brew Your Own Probiotic Drink

Ingredients:

  • 4 cups water
  • 2-3 tablespoons loose tea or 2-3 tea bags (black, green, or herbal)
  • 1 cup granulated sugar
  • 1 cup starter tea (from a previous batch of kombucha or store-bought kombucha)
  • 1 SCOBY (Symbiotic Culture of Bacteria and Yeast)
  • Optional: flavors like ginger, berries, or herbs for secondary fermentation

Instructions:

  1. Boil water: In a pot, bring 4 cups of water to a boil.
  2. Brew tea: Remove from heat and add the tea. Let it steep for about 5-10 minutes, then remove the tea leaves or bags.
  3. Dissolve sugar: Stir in the granulated sugar until completely dissolved. Allow the tea to cool to room temperature.
  4. Combine ingredients: Once cooled, pour the sweetened tea into a clean glass jar. Add the starter tea and gently place the SCOBY on top.
  5. Cover and ferment: Cover the jar with a clean cloth or coffee filter secured with a rubber band. Let it ferment in a warm, dark place for about 7-14 days, depending on your taste preference.
  6. Taste test: After a week, start tasting the kombucha daily until it reaches your desired level of tanginess.
  7. Bottle and flavor (optional): Once fermented, remove the SCOBY and reserve it for your next batch. Pour the kombucha into bottles, leaving some space at the top. Add any additional flavors you like, then seal the bottles.
  8. Second fermentation: Leave the bottles at room temperature for 3-7 days to carbonate. Refrigerate to stop fermentation, and enjoy chilled!
