For the Peanut Dipping Sauce:

  • 1/4 cup peanut butter (creamy or crunchy)
  • 2 tbsp soy sauce or tamari (for gluten-free)
  • 1 tbsp maple syrup or agave nectar
  • 1 tbsp rice vinegar
  • 1/2 tsp sesame oil
  • 1/2-1 tsp sriracha or chili paste (optional for heat)
  • 2-3 tbsp warm water (to thin the sauce)

Instructions

  1. Prepare the fillings: Prepare all the vegetables by slicing the cucumber, carrot, and bell pepper into thin julienne strips. Chop the lettuce, cilantro, and mint leaves. If you’re using vermicelli noodles, cook according to package instructions and set aside. Slice the avocado.
