Ingredients

- 1 small cucumber, julienned
- 1 medium carrot, julienned
- 1/2 red bell pepper, julienned
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/2 avocado, sliced
- Cooked vermicelli noodles (optional, for added texture)
For the Peanut Dipping Sauce:
- 1/4 cup peanut butter (creamy or crunchy)
- 2 tbsp soy sauce or tamari (for gluten-free)
- 1 tbsp maple syrup or agave nectar
- 1 tbsp rice vinegar
- 1/2 tsp sesame oil
- 1/2-1 tsp sriracha or chili paste (optional for heat)
- 2-3 tbsp warm water (to thin the sauce)
Instructions
- Prepare the fillings: Prepare all the vegetables by slicing the cucumber, carrot, and bell pepper into thin julienne strips. Chop the lettuce, cilantro, and mint leaves. If you’re using vermicelli noodles, cook according to package instructions and set aside. Slice the avocado.
- Soften the rice paper: Fill a shallow dish with warm water. Gently dip a rice paper wrapper into the water for 10-15 seconds, or until softened but not too fragile.
