Delicious Vegan Stuffed Bell Peppers

Vegan Stuffed Bell Peppers Recipe:

Ingredients:

  • 4 large bell peppers (tops cut off, seeds removed)
  • 1 cup quinoa (cooked)
  • 1 can black beans (drained and rinsed)
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley (for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté the onion and garlic until soft.
  3. Add the black beans, diced tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes, then stir in the cooked quinoa.
  4. Stuff the bell peppers with the quinoa mixture.
  5. Place the stuffed peppers in a baking dish and bake for 25-30 minutes until the peppers are tender.
  6. Garnish with fresh parsley and serve.
