Vegan Stuffed Bell Peppers Recipe:
Ingredients:
- 4 large bell peppers (tops cut off, seeds removed)
- 1 cup quinoa (cooked)
- 1 can black beans (drained and rinsed)
- 1 small onion (chopped)
- 2 garlic cloves (minced)
- 1 cup diced tomatoes
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh parsley (for garnish)
Instructions:
- Preheat oven to 375°F (190°C).
- In a pan, heat olive oil and sauté the onion and garlic until soft.
- Add the black beans, diced tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes, then stir in the cooked quinoa.
- Stuff the bell peppers with the quinoa mixture.
- Place the stuffed peppers in a baking dish and bake for 25-30 minutes until the peppers are tender.
- Garnish with fresh parsley and serve.
