Vegan Wraps Recipe

Ingredients:

  • 4 large whole wheat or spinach tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup spinach or mixed greens
  • 1/2 cup salsa (mild or spicy)
  • 1 tablespoon lime juice
  • 1 teaspoon cumin (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Filling:
    • In a large bowl, combine the black beans, corn, diced bell pepper, lime juice, cumin (if using), and salt and pepper. Mix well to combine.
  2. Assemble the Wraps:
    • Lay a tortilla flat on a clean surface. Place a handful of spinach or mixed greens in the center of the tortilla. Add a generous scoop of the black bean filling and a few slices of avocado.
  3. Wrap It Up:
    • Fold in the sides of the tortilla, then roll it tightly from the bottom to the top, enclosing the filling. Repeat with the remaining tortillas and filling.
  4. Serve:
    • Cut the wraps in half diagonally and serve with salsa or your favorite dipping sauce.

Tips:

  • Feel free to customize your wraps with other vegetables (like cucumber, carrots, or zucchini) or add some vegan cheese or hummus for extra flavor.
  • These wraps are great for meal prep and can be stored in the fridge for a few days.
