Ingredients:
- 8 small corn tortillas
- 1 can black beans (drained and rinsed)
- 1 cup cooked lentils
- 1 tsp cumin
- 1 tsp chili powder
- 1 avocado (sliced)
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Lime wedges (for serving)
- Salsa (optional)
Instructions:
- Heat the black beans and lentils in a pan, adding cumin and chili powder for flavor.
- Warm the tortillas in a dry skillet for about 30 seconds on each side.
- Fill each tortilla with the bean and lentil mixture.
- Top with avocado slices, shredded lettuce, diced tomatoes, and cilantro.
- Serve with lime wedges and your favorite salsa.
