Grilled Veggie Delight Sandwich

Grilled Veggie Sandwich Recipe:

Ingredients:

  • 2 slices of whole-grain bread
  • 1 zucchini (sliced)
  • 1 red bell pepper (sliced)
  • 1 small eggplant (sliced)
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup hummus
  • Fresh spinach leaves
  • 1 clove garlic (minced)

Instructions:

  1. Toss the zucchini, bell pepper, and eggplant slices in olive oil, balsamic vinegar, garlic, salt, and pepper.
  2. Grill the veggies for about 3-4 minutes per side until tender and slightly charred.
  3. Toast the bread and spread hummus on both slices.
  4. Layer the grilled vegetables and fresh spinach leaves on one slice of bread, then top with the second slice.
  5. Slice and serve the sandwich warm.
