Grilled Veggie Sandwich Recipe:
Ingredients:
- 2 slices of whole-grain bread
- 1 zucchini (sliced)
- 1 red bell pepper (sliced)
- 1 small eggplant (sliced)
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- 1/4 cup hummus
- Fresh spinach leaves
- 1 clove garlic (minced)
Instructions:
- Toss the zucchini, bell pepper, and eggplant slices in olive oil, balsamic vinegar, garlic, salt, and pepper.
- Grill the veggies for about 3-4 minutes per side until tender and slightly charred.
- Toast the bread and spread hummus on both slices.
- Layer the grilled vegetables and fresh spinach leaves on one slice of bread, then top with the second slice.
- Slice and serve the sandwich warm.
