Heartwarming Vegan Vegetable Soup

Vegan Soup Recipe:

Ingredients:

  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 3 garlic cloves (minced)
  • 1 zucchini (diced)
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 cup green beans (trimmed and cut)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sauté until softened (about 5 minutes).
  2. Stir in garlic and cook for another minute.
  3. Add zucchini, diced tomatoes, vegetable broth, green beans, thyme, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for about 20-25 minutes until vegetables are tender.
  5. Adjust seasoning as needed and garnish with fresh parsley before serving.
