Vegan Soup Recipe:
Ingredients:
- 1 tbsp olive oil
- 1 onion (chopped)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 3 garlic cloves (minced)
- 1 zucchini (diced)
- 1 can diced tomatoes (14 oz)
- 4 cups vegetable broth
- 1 cup green beans (trimmed and cut)
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sauté until softened (about 5 minutes).
- Stir in garlic and cook for another minute.
- Add zucchini, diced tomatoes, vegetable broth, green beans, thyme, basil, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for about 20-25 minutes until vegetables are tender.
- Adjust seasoning as needed and garnish with fresh parsley before serving.
