Quick Vegan Tofu Stir-Fry

Vegan Tofu Stir-Fry Recipe:

Ingredients:

  • 1 block firm tofu (pressed and cubed)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil (or vegetable oil)
  • 2 cloves garlic (minced)
  • 1-inch piece of ginger (grated)
  • 1 tbsp cornstarch (optional, for crispy tofu)
  • Cooked rice or quinoa (for serving)
  • Sesame seeds (for garnish)
  • Green onions (for garnish)

Instructions:

  1. If using cornstarch, toss the tofu cubes in it for a crispy texture.
  2. Heat sesame oil in a large pan or wok over medium-high heat.
  3. Add the tofu and cook until golden brown, about 5-7 minutes. Remove and set aside.
  4. In the same pan, add garlic and ginger, sauté for 1 minute.
  5. Add mixed vegetables and stir-fry for about 5 minutes until tender-crisp.
  6. Return the tofu to the pan and add soy sauce. Stir to combine and heat through.
  7. Serve over cooked rice or quinoa, garnished with sesame seeds and green onions.
