Vegan Tofu Stir-Fry Recipe:
Ingredients:
- 1 block firm tofu (pressed and cubed)
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 2 tbsp soy sauce
- 1 tbsp sesame oil (or vegetable oil)
- 2 cloves garlic (minced)
- 1-inch piece of ginger (grated)
- 1 tbsp cornstarch (optional, for crispy tofu)
- Cooked rice or quinoa (for serving)
- Sesame seeds (for garnish)
- Green onions (for garnish)
Instructions:
- If using cornstarch, toss the tofu cubes in it for a crispy texture.
- Heat sesame oil in a large pan or wok over medium-high heat.
- Add the tofu and cook until golden brown, about 5-7 minutes. Remove and set aside.
- In the same pan, add garlic and ginger, sauté for 1 minute.
- Add mixed vegetables and stir-fry for about 5 minutes until tender-crisp.
- Return the tofu to the pan and add soy sauce. Stir to combine and heat through.
- Serve over cooked rice or quinoa, garnished with sesame seeds and green onions.
