  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup vegetable broth (plus more if needed)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 2 tbsp fresh parsley (chopped, for garnish)

  • 1 small onion (finely chopped)

Instructions:

For the Seitan Roast:

  1. Prepare the Seitan Dough:
    • In a large mixing bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, garlic powder, onion powder, dried thyme, rosemary, salt, and pepper.
    • In a separate bowl, whisk together the vegetable broth, soy sauce, olive oil, and tomato paste.
    • Pour the wet ingredients into the dry ingredients and stir until a dough forms. Knead the dough for 3-5 minutes until it becomes elastic and firm. If it’s too dry, add a little more vegetable broth.
  2. Shape the Roast:
