Detailed Recipe
Ingredients:
- 4 large collard green leaves (stems removed)
- 1/2 cup cooked quinoa or rice
- 1/2 cup shredded carrots
- 1/2 avocado (sliced)
- 1/4 cup hummus or tahini (for spread)
- 1/4 cup cucumber (thinly sliced)
- 1/4 cup red bell pepper (thinly sliced)
- Salt and pepper to taste
- Fresh lemon juice (optional, for extra flavor)
Instructions:
- Prepare the Collard Greens: Wash the collard greens thoroughly and trim off the thick stems. Use a knife to shave down the thick spine of each leaf so it’s easier to roll.
- Assemble the Wraps: Lay a collard green leaf flat on a clean surface. Spread a thin layer of hummus or tahini on the center of the leaf. Layer with quinoa or rice, shredded carrots, cucumber, red bell pepper, and avocado slices.
- Wrap and Serve: Carefully fold the sides of the collard green over the filling and roll tightly from the bottom up, securing everything inside. Repeat with the remaining leaves and fillings. Slice in half and serve immediately with a drizzle of fresh lemon juice, if desired.
