Detailed Recipe
Ingredients:
- 10 rice paper wrappers
- 1 medium carrot (julienned)
- 1 cucumber (julienned)
- 1/2 red bell pepper (julienned)
- 1/4 cup purple cabbage (shredded)
- 1/4 cup fresh cilantro (optional)
- 1/4 cup fresh mint (optional)
- 1 avocado (sliced)
- 1/4 cup vermicelli rice noodles (optional)
- 1 tablespoon sesame seeds (optional, for garnish)
For the dipping sauce:
- 1/4 cup tamari or soy sauce
- 1 tablespoon peanut butter or almond butter
- 1 teaspoon sesame oil
- 1 teaspoon maple syrup or agave syrup
- 1 teaspoon rice vinegar
- 1/2 teaspoon ginger (grated)
Instructions:
- Prepare the Filling: Slice all your vegetables (carrot, cucumber, bell pepper, cabbage, and avocado) into thin strips. If using vermicelli noodles, cook them according to package instructions and set aside to cool.
- Soak the Rice Paper: Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds, or until it becomes soft and pliable.
- Assemble the Rolls: Lay the softened rice paper on a clean, flat surface. In the center, layer a small handful of carrot, cucumber, bell pepper, cabbage, avocado, fresh herbs, and optional vermicelli noodles.
- Roll: Carefully fold in the sides of the rice paper and then roll it tightly from the bottom up, like a burrito.
- Repeat: Repeat the process for the remaining rice paper wrappers and fillings.
- Prepare the Dipping Sauce: In a small bowl, whisk together the tamari or soy sauce, peanut butter, sesame oil, maple syrup, rice vinegar, and grated ginger.
- Serve: Garnish the spring rolls with sesame seeds and serve immediately with the dipping sauce.
