Healthy Crunch: Roasted Chickpeas Snack

Ingredients:

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper (optional for heat)
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 200°C (400°F).
  2. Prepare the Chickpeas:
    • Drain and rinse the chickpeas thoroughly.
    • Pat them dry with a paper towel to remove excess moisture (this ensures a crispy texture).
  3. Season the Chickpeas:
    • In a mixing bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, cumin, cayenne pepper (if using), salt, and pepper.
    • Make sure the chickpeas are evenly coated with the seasoning.
  4. Roast the Chickpeas:
    • Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
    • Roast in the preheated oven for 25-30 minutes, stirring halfway through, until crispy and golden brown.
  5. Cool and Serve:
    • Remove the chickpeas from the oven and let them cool for a few minutes (they will crisp up further as they cool).
    • Serve as a snack or use as a crunchy topping for salads and grain bowls.
