Quick & Healthy Vegan Energy Balls

Description: These naturally sweet vegan energy balls are made with dates, nuts, oats, and cacao, offering a quick and nutritious snack. Ingredients:

  • 1 cup pitted dates
  • 1/2 cup raw nuts (almonds, hazelnuts, or walnuts)
  • 1/2 cup rolled oats
  • 2 tbsp cacao powder
  • 1 tbsp chia seeds (optional)
  • 1 tbsp maple syrup (optional, for extra sweetness)
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Blend the Ingredients:
    • In a food processor, combine the dates, nuts, rolled oats, cacao powder, chia seeds (if using), vanilla extract, and a pinch of salt.
    • Process until the mixture comes together and forms a sticky dough. If the mixture is too dry, add 1-2 teaspoons of water or more dates.
  2. Form the Energy Balls:
    • Using your hands, scoop out small portions of the dough and roll them into bite-sized balls.
    • If desired, you can roll the energy balls in extra cacao powder, shredded coconut, or chopped nuts for extra flavor and texture.
  3. Chill and Serve:
    • Place the energy balls in the refrigerator for 20-30 minutes to firm up.
    • Once chilled, they’re ready to enjoy as a healthy snack.
  4. Store:
    • Store the energy balls in an airtight container in the fridge for up to a week.
