Ingredients:
- 8 rice paper wrappers
- 1 carrot, julienned
- 1 cucumber, julienned
- 4 lettuce leaves, torn into pieces
- 1/2 block firm tofu, sliced into thin strips
- Fresh herbs (such as mint or cilantro) – optional
- Sweet chili sauce for dipping
Instructions:
- Prepare the Vegetables and Tofu: Julienne the carrots and cucumber, tear the lettuce into pieces, and slice the tofu into thin strips.
- Soften the Rice Paper: Dip each rice paper wrapper into warm water for a few seconds until it becomes soft and pliable.
- Assemble the Rolls: Place a small amount of each vegetable and tofu strip in the center of the rice paper. Fold in the sides and roll it tightly like a burrito.
- Serve: Serve the spring rolls immediately with sweet chili sauce for dipping. You can also store them in the fridge for up to a day, covered with a damp cloth to prevent drying out.
