- 1 cup vegan cheese (shredded)
- 1 bell pepper (sliced)
- 1 cup spinach (fresh or cooked)
- 1/2 cup mushrooms (sliced)
- 1/2 onion (sliced)
- 1 tbsp olive oil (for frying or baking)
- Salsa or guacamole (for serving)
Instructions:
- Prepare the Filling:
- In a skillet, heat olive oil over medium heat. Sauté the sliced onion, bell pepper, and mushrooms until softened. Add spinach and cook until wilted.
- Assemble the Quesadillas:
