Ingredients:

  • 4 whole wheat tortillas
  • 1 cup vegan cheese (shredded)
  • 1 bell pepper (sliced)
  • 1 cup spinach (fresh or cooked)
  • 1/2 cup mushrooms (sliced)
  • 1/2 onion (sliced)
  • 1 tbsp olive oil (for frying or baking)
  • Salsa or guacamole (for serving)

Instructions:

  1. Prepare the Filling:
    • In a skillet, heat olive oil over medium heat. Sauté the sliced onion, bell pepper, and mushrooms until softened. Add spinach and cook until wilted.
  2. Assemble the Quesadillas:
    • Place one tortilla in the skillet or on a baking sheet. Sprinkle half with vegan cheese and then layer with the sautéed vegetables. Top with another tortilla.
  3. Cook the Quesadillas:
    • For Baking: Preheat the oven to 400°F (200°C) and bake for 10-12 minutes, flipping halfway through, until crispy.
    • For Frying: Cook in the skillet for 3-4 minutes on each side until golden brown and the cheese has melted.
  4. Serve:
    • Cut the quesadillas into wedges and serve warm with salsa or guacamole.
